When and How Do I Harvest Garlic?

I planted giant garlic in fall and I don't really know what to do with it. It's just started to flower, do i let it go to seed and then die down - then dig it up? Or do i pinch the flower off and let it keep growing? Any help or suggestions would be great.

Yep. It should be ready for harvest once most of the foilage has died off. I've also been told if it's really wet, you might want to get them out of the ground sooner than later so the outer parchment doesn't start to rot. Now I haven't actually grown garlic myself (yet), but I'm planning on planting some this fall so I've been reading up on it.
