I need a little orchid advise. Anyone wanna help?

I have a couple of questions. First, my orchid needs to be repotted and, at the moment, it is in moss. Can it be repotted in bark? (It is a mini moth orchid in a container that you would use as a glass for drinking if it was empty). Got it with closed blooms and they opened and lasted a few months. I read on the internet when the blooms die, you can cut the spike above a good looking node and grow a new spike. So I did! But, instead of getting a new spike, I got what looks like a whole new plant growing at the top. Anyone know how to transplant this? Any help would be greatly appreciated.
