Beets - Beta vulgaris
Beets are very nutritious and easy to grow. They provide greens and a vibrant root perfect for summer salads and fall sides.
Arugula - Eruca vesicaria ssp. Sativa
In a cooler place, shaded from midday sun, arugula is a cut-and-come-again salad green that can last all spring, summer, and fall.
Tomatillo - -Physalis ixocarpa
The tomatillo is easy to grow, and makes lovely lantern fruits that make a tangy green salsa.
Rosa Bianca Eggplant - Solanum melongena var. esculentum 'Rosa Bianca'
These lovely pink and white eggplants like the dry heat here in Colorado. I love growing my own fruits that are otherwise pricey or unavailable in the store.
